For the Rice:
- 1 ½ cups cooked white or brown rice
- ½ tsp salt
- 1 tbsp lime juice
- 2 tbsp chopped cilantro
For the Bowl Additions:
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- ½ cup diced tomatoes
- ½ cup shredded lettuce
- ¼ cup sliced jalapeños
- ¼ cup sliced black olives (optional)
For the Toppings:
- ½ cup shredded cheddar or Monterey Jack cheese
- ¼ cup sour cream or Greek yogurt
- ½ cup guacamole or sliced avocado
- ¼ cup salsa or pico de gallo
- Lime wedges for serving
Instructions
Step 1: Cook the Rice
- Rinse white or brown rice under cold water.
- Cook according to package instructions.
- Once cooked, fluff with a fork and stir in salt, lime juice, and cilantro.
Step 2: Prepare the Ground Beef
- Heat olive oil in a large skillet over medium-high heat.
- Add diced onions and sauté for 2-3 minutes until soft.
- Stir in garlic and cook for another 30 seconds until fragrant.
- Add ground beef, breaking it apart with a spatula.
- Cook for 5-7 minutes, stirring occasionally, until browned.
- Sprinkle in salt, black pepper, garlic powder, onion powder, chili powder, cumin, and smoked paprika.
- Stir well and cook for another 2-3 minutes.
- Pour in tomato sauce and beef broth (if using) and let simmer for 5 minutes.
Step 3: Assemble the Bowls
- Divide cooked rice into serving bowls.
- Spoon the seasoned ground beef over the rice.
- Add black beans, corn, tomatoes, lettuce, and jalapeños.
- Sprinkle with cheese and other toppings.
- Serve with lime wedges and extra salsa.
