- 1 lb ground beef
- 2 medium zucchinis, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- In a greased baking dish, layer the sliced zucchini, followed by the beef mixture.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or mushrooms.
- This dish can be made ahead of time and reheated.
- For a low-carb option, you can omit the tomatoes.
