For the Ginger Gummies:
- 1 cup fresh ginger root, peeled and sliced
- 2 cups water
- ½ cup raw honey or maple syrup (adjust for sweetness)
- ¼ cup fresh lemon juice
- 3 tablespoons gelatin powder (grass-fed preferred)
- ½ teaspoon ground turmeric (optional, for extra anti-inflammatory benefits)
- 1 teaspoon vanilla extract (optional, for added flavor)
Instructions
Step 1: Prepare the Ginger Tea Base
- In a small saucepan, bring 2 cups of water to a boil.
- Add sliced ginger and simmer for 10-15 minutes to extract the flavors.
- Remove from heat and strain out the ginger pieces, keeping the liquid.
Step 2: Add Sweetener and Lemon Juice
- While the ginger tea is still warm, stir in honey (or maple syrup) and fresh lemon juice.
- If using, add turmeric and vanilla extract and mix well.
Step 3: Dissolve the Gelatin
- In a separate bowl, sprinkle the gelatin powder over ½ cup of the warm ginger tea and let it sit for 2-3 minutes.
- Stir gently until fully dissolved.
- Slowly pour the gelatin mixture back into the saucepan, stirring continuously to avoid clumps.
Step 4: Pour and Set
- Pour the mixture into silicone molds or a shallow dish lined with parchment paper.
- Refrigerate for 2-3 hours or until the gummies are firm.
Step 5: Remove and Store
- Pop the gummies out of the molds or cut them into bite-sized squares if using a dish.
- Store in an airtight container in the refrigerator for up to 2 weeks.
Notes
✔ Use fresh ginger for the best flavor and health benefits – Powdered ginger won’t provide the same rich taste.
✔ Adjust sweetness to your preference – Add more or less honey/maple syrup based on taste.
✔ For a firmer gummy texture – Increase the gelatin by 1 extra tablespoon.
✔ Use fun-shaped silicone molds – Great for kids and makes them more enjoyable to eat!
✔ For an extra immune boost – Add elderberry syrup or vitamin C powder to the mixture.
