These Honey and Garlic Roasted Mushrooms are caramelized, flavorful, and easy to make. A perfect side dish for any meal!

Ingredients

Scale

For the Roasted Mushrooms:

  • 1 lb (450g) cremini or button mushrooms, cleaned and trimmed
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon balsamic vinegar (optional, for extra depth)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 teaspoon fresh thyme or rosemary (optional, for garnish)
  • 1 tablespoon chopped parsley (for garnish)

Instructions

Step 1: Prepare the Mushrooms

  1. Preheat oven to 400°F (200°C).
  2. Wipe mushrooms clean with a damp paper towel or soft brush. Trim any tough stems if needed.
  3. If mushrooms are large, slice them in half; otherwise, keep them whole.

Step 2: Make the Honey Garlic Sauce

  1. In a bowl, mix olive oil, melted butter, minced garlic, honey, soy sauce, balsamic vinegar (if using), salt, black pepper, and red pepper flakes.
  2. Stir until well combined.

Step 3: Coat the Mushrooms

  1. Place mushrooms in a large bowl or directly on a baking sheet.
  2. Pour the honey garlic sauce over the mushrooms and toss until well coated.
  3. Spread mushrooms in a single layer for even roasting.

Step 4: Roast the Mushrooms

  1. Roast for 18-22 minutes, stirring halfway through for even caramelization.
  2. The mushrooms should be tender, golden brown, and slightly crispy at the edges when done.

Step 5: Garnish and Serve

  1. Remove mushrooms from the oven and sprinkle with fresh thyme, rosemary, or parsley.
  2. Serve immediately as a side dish, on toast, over pasta, or with grilled meats.

Notes

  • Don’t overcrowd the pan: Spread mushrooms in a single layer to avoid steaming instead of roasting.
  • Use high heat: Roasting at 400°F ensures caramelization and rich flavor.
  • Adjust sweetness & spice: Reduce honey for less sweetness or add extra red pepper flakes for heat.
  • Mix mushroom varieties: Try a combination of cremini, shiitake, and portobello for depth of flavor.
  • Storage: Store leftovers in an airtight container for up to 3 days. Reheat in a skillet or oven for best results.
