For the Roasted Mushrooms:
- 1 lb (450g) cremini or button mushrooms, cleaned and trimmed
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon balsamic vinegar (optional, for extra depth)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 teaspoon fresh thyme or rosemary (optional, for garnish)
- 1 tablespoon chopped parsley (for garnish)
Instructions
Step 1: Prepare the Mushrooms
- Preheat oven to 400°F (200°C).
- Wipe mushrooms clean with a damp paper towel or soft brush. Trim any tough stems if needed.
- If mushrooms are large, slice them in half; otherwise, keep them whole.
Step 2: Make the Honey Garlic Sauce
- In a bowl, mix olive oil, melted butter, minced garlic, honey, soy sauce, balsamic vinegar (if using), salt, black pepper, and red pepper flakes.
- Stir until well combined.
Step 3: Coat the Mushrooms
- Place mushrooms in a large bowl or directly on a baking sheet.
- Pour the honey garlic sauce over the mushrooms and toss until well coated.
- Spread mushrooms in a single layer for even roasting.
Step 4: Roast the Mushrooms
- Roast for 18-22 minutes, stirring halfway through for even caramelization.
- The mushrooms should be tender, golden brown, and slightly crispy at the edges when done.
Step 5: Garnish and Serve
- Remove mushrooms from the oven and sprinkle with fresh thyme, rosemary, or parsley.
- Serve immediately as a side dish, on toast, over pasta, or with grilled meats.
Notes
- Don’t overcrowd the pan: Spread mushrooms in a single layer to avoid steaming instead of roasting.
- Use high heat: Roasting at 400°F ensures caramelization and rich flavor.
- Adjust sweetness & spice: Reduce honey for less sweetness or add extra red pepper flakes for heat.
- Mix mushroom varieties: Try a combination of cremini, shiitake, and portobello for depth of flavor.
- Storage: Store leftovers in an airtight container for up to 3 days. Reheat in a skillet or oven for best results.
