For the Chicken:

  • 2 lbs chicken thighs, drumsticks, or breast (cut into strips if preferred)
  • 1 cup buttermilk
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)
  • Vegetable oil for frying

  • 2 tbsp hot sauce (Frank’s RedHot or Sriracha)
  • 1 tsp red pepper flakes
  • 1 tbsp butter
  • 1 tbsp apple cider vinegar
  • 1/2 tsp garlic powder
  • Pinch of salt

Instructions

  • Marinate the Chicken:

    • In a bowl, mix buttermilk and eggs.
    • Add chicken pieces and coat well.
    • Cover and refrigerate for at least 30 minutes (or overnight for best results).
  • Prepare the Breading:

    • In another bowl, combine flour, cornstarch, and seasonings.
    • Remove chicken from buttermilk, dredge in flour mixture, and coat evenly.
    • Let the coated chicken rest for 5-10 minutes.
  • Fry the Chicken:

    • Heat oil in a deep fryer or large pot to 350°F (175°C).
    • Fry chicken in batches for 8-10 minutes until golden brown and crispy.
    • Drain on a wire rack.
  • Make the Hot Honey Sauce:

    • In a saucepan, heat honey, hot sauce, butter, red pepper flakes, apple cider vinegar, and garlic powder over medium heat.
    • Stir until well combined, then remove from heat.
  • Coat the Chicken:

    • Toss fried chicken in the hot honey sauce or brush it on for an even coating.

Notes

  • Double-Coating: For extra crispiness, dip the chicken in buttermilk again after the first flour coating, then re-coat with flour.
  • Oil Temperature: Maintain 350°F (175°C) for perfect frying results.
  • Air Fryer Option: Cook at 375°F (190°C) for 20 minutes, flipping halfway.
  • Baking Alternative: Bake at 400°F (200°C) for 25-30 minutes.
