Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let rest.
  4. In the same skillet, add minced garlic and cherry tomatoes. Sauté for 2-3 minutes until tomatoes are soft.
  5. Slice the cooked chicken and add it back to the skillet along with the cooked pasta, balsamic vinegar, and fresh basil. Toss to combine.
  6. Serve warm, topped with Parmesan cheese if desired.
