- 2 boneless, skinless chicken breasts
- 8 oz pasta (penne or fusilli)
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet.
- Cook chicken for about 6-7 minutes on each side, or until fully cooked. Remove from skillet and let rest.
- In the same skillet, add minced garlic and cherry tomatoes. Sauté for 2-3 minutes until tomatoes are soft.
- Slice the cooked chicken and add it back to the skillet along with the cooked pasta, balsamic vinegar, and fresh basil. Toss to combine.
- Serve warm, topped with Parmesan cheese if desired.
Notes
- For extra flavor, marinate the chicken in balsamic vinegar for 30 minutes before cooking.
- Feel free to add other vegetables like spinach or bell peppers.
