  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

For the Vanilla Icing:

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat & Prepare the Pan: Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  • Mix Dry Ingredients: In a bowl, whisk together oats, flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • Cream Butter & Sugars: In a large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
  • Add Wet Ingredients: Mix in the egg and vanilla extract, then stir in milk until combined.
  • Combine Everything: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Spread & Bake: Spread the dough evenly in the prepared pan. Bake for 18-22 minutes or until the edges are golden brown.
  • Make the Icing: While the bars cool, whisk together powdered sugar, milk, and vanilla extract until smooth.
  • Drizzle & Serve: Drizzle the icing over the cooled bars, let it set, then slice into squares and enjoy!
