For the Cookie Bars:
- 1 cup old-fashioned oats (not quick oats)
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup milk
For the Vanilla Icing:
- 1 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat & Prepare the Pan: Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together oats, flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
- Cream Butter & Sugars: In a large mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
- Add Wet Ingredients: Mix in the egg and vanilla extract, then stir in milk until combined.
- Combine Everything: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Spread & Bake: Spread the dough evenly in the prepared pan. Bake for 18-22 minutes or until the edges are golden brown.
- Make the Icing: While the bars cool, whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle & Serve: Drizzle the icing over the cooled bars, let it set, then slice into squares and enjoy!
Notes
- Use old-fashioned oats for a chewy texture; avoid quick oats.
- Do not overmix to keep the bars soft and tender.
- Let bars cool completely before icing to prevent the glaze from melting.
