Ingredients

  • 1 lb (450g) boneless chicken thighs, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 tablespoon sugar (optional)
  • Fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, chili powder, and salt. Add the chicken pieces and marinate for at least 1 hour, preferably overnight in the refrigerator.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the marinated chicken (along with the marinade) to the skillet and cook until the chicken is browned on all sides, about 5-7 minutes.
  5. Pour in the crushed tomatoes and bring to a simmer. Cook for 10-15 minutes, stirring occasionally.
  6. Reduce the heat to low and stir in the heavy cream. If desired, add sugar to balance the acidity of the tomatoes. Simmer for an additional 5-10 minutes until the sauce thickens.
  7. Garnish with fresh cilantro before serving.

  • Adjust the chili powder to taste for desired spiciness.
