Description
A rich and creamy Indian dish made with marinated chicken cooked in a spiced tomato and butter sauce.

- 1 lb (450g) boneless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 1 teaspoon salt
- 3 tablespoons unsalted butter
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream
- 1 tablespoon sugar (optional)
- Fresh cilantro, for garnish
Instructions
- In a large bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, chili powder, and salt. Add the chicken pieces and marinate for at least 1 hour, preferably overnight in the refrigerator.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the marinated chicken (along with the marinade) to the skillet and cook until the chicken is browned on all sides, about 5-7 minutes.
- Pour in the crushed tomatoes and bring to a simmer. Cook for 10-15 minutes, stirring occasionally.
- Reduce the heat to low and stir in the heavy cream. If desired, add sugar to balance the acidity of the tomatoes. Simmer for an additional 5-10 minutes until the sauce thickens.
- Garnish with fresh cilantro before serving.
Notes
- For best flavor, marinate the chicken overnight.
- Adjust the chili powder to taste for desired spiciness.
- Serve with rice or naan for a complete meal.
