Ingredients

Scale

For the Chicken Cutlets:

  • 4 boneless, skinless chicken cutlets
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

For the Topping:

  • 2 cups fresh tomatoes, diced (Roma or vine-ripened preferred)
  • 1 ball of burrata cheese
  • 1 handful of fresh basil leaves
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Pinch of salt

Instructions

  1. Prepare the Chicken Cutlets:
    • Season the chicken cutlets with garlic powder, Italian seasoning, salt, and pepper.
    • Use a meat mallet to pound the chicken to an even thickness for even cooking.
  2. Cook the Chicken:
    • Heat olive oil and butter in a skillet over medium-high heat.
    • Sear the chicken for 3-4 minutes per side until golden brown and fully cooked (internal temperature of 165°F).
    • Remove from heat and let rest for 5 minutes.
  3. Prepare the Tomato and Burrata Topping:
    • In a bowl, mix diced tomatoes, olive oil, balsamic vinegar, and a pinch of salt.
    • Tear the burrata into small pieces for easy topping.
  4. Assemble the Dish:
    • Place the cooked chicken cutlets on a serving plate.
    • Spoon the tomato mixture over each cutlet, followed by pieces of burrata.
    • Garnish with fresh basil leaves.
  5. Serve Immediately:
    • Pair with your choice of sides, such as crusty bread, pasta, or a light salad.

Notes

  • Pounding the Chicken: Ensure the chicken is even in thickness for uniform cooking.
  • Fresh Ingredients: Use high-quality tomatoes, fresh basil, and creamy burrata for the best flavor.
  • Customizations: Add a pinch of red pepper flakes to the topping for a slight kick or drizzle with balsamic glaze for added sweetness.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on a skillet to retain flavor.
  • Side Suggestions: Serve with a side of lemon-herb rice, garlic bread, or roasted vegetables for a complete meal.
