Ingredients

  • 2 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the rice to the saucepan, stirring to coat the grains with the oil and onion mixture.
  4. Pour in the broth and add the oregano, basil, thyme, salt, and black pepper. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the grated Parmesan cheese if using.
  7. Garnish with fresh parsley before serving.

  • For a vegan version, omit the Parmesan cheese.
