Description
A flavorful side dish made with long-grain white rice, infused with Italian herbs and garnished with fresh parsley.

- 1 cup long-grain white rice
- 2 cups vegetable or chicken broth
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the rice to the saucepan, stirring to coat the grains with the oil and onion mixture.
- Pour in the broth and add the oregano, basil, thyme, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork and stir in the grated Parmesan cheese if using.
- Garnish with fresh parsley before serving.
Notes
- Adjust the salt according to your taste preference.
- For a vegan version, omit the Parmesan cheese.
