Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1 cup jalapeños, diced (fresh or pickled)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

Sauté Aromatics:

  • Heat a splash of oil in a large pot over medium heat.
  • Add diced onion and sauté until translucent, about 5 minutes.
  • Stir in minced garlic and cook for 1 minute until fragrant.

2. Cook the Chicken:

  • Place chicken breasts into the pot.
  • Add chicken broth and diced tomatoes with green chilies.
  • Bring to a boil, then reduce heat to a simmer for 20-25 minutes, until chicken is fully cooked.

3. Shred the Chicken:

  • Remove chicken breasts and shred them using two forks.
  • Return shredded chicken to the pot.

4. Add Creamy Ingredients:

  • Lower the heat and stir in cream cheese, shredded cheddar, and milk.
  • Mix until cheeses are melted and the soup is creamy.

5. Season the Soup:

  • Add diced jalapeños, cumin, paprika, salt, and pepper.
  • Stir well and simmer for another 5-10 minutes to meld flavors.

6. Serve:

  • Ladle into bowls, garnish with fresh cilantro, and serve hot.

Notes

  • Adjust Spiciness: For a milder soup, reduce jalapeños or remove seeds.
  • Thicker Soup: Add a cornstarch slurry if you prefer a thicker consistency.
  • Extra Toppings: Crumbled bacon, sliced avocado, or tortilla chips enhance the flavor.
  • Dairy-Free Version: Use dairy-free alternatives for cream cheese, cheddar, and milk.
  • Make Ahead: The soup tastes even better the next day as flavors meld.
