Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts (sliced in half to make thin cutlets)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
For the Jalapeño Peach Sauce:
- 2 fresh peaches, peeled and sliced
- 1 jalapeño, finely chopped (adjust based on spice preference)
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon butter
- ½ cup chicken broth
- 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)
For Garnishing & Serving:
- Fresh cilantro or parsley, chopped
- Cooked rice, quinoa, or mashed potatoes
- Crumbled feta or goat cheese (optional)

Prepare the Chicken:
- Pat the chicken dry with a paper towel.
- Season both sides with salt, black pepper, smoked paprika, and garlic powder.

- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken cutlets and cook for 3-4 minutes per side until golden brown and cooked through.
- Transfer to a plate and set aside.

- In the same skillet, melt butter over medium heat.
- Add the sliced peaches and cook for 2-3 minutes until caramelized.
- Stir in the chopped jalapeño and cook for another minute.
- Add honey, apple cider vinegar, Dijon mustard, and red pepper flakes.
- Pour in the chicken broth and bring to a simmer.
- Stir in the cornstarch slurry and let the sauce thicken for 2 minutes.

- Return the cooked chicken to the skillet, spooning the sauce over it.
