  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil

For the Jalapeño Peach Sauce:

  • 2 fresh peaches, peeled and sliced
  • 1 jalapeño, finely chopped (adjust based on spice preference)
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter
  • ½ cup chicken broth
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

For Garnishing & Serving:

  • Fresh cilantro or parsley, chopped
  • Cooked rice, quinoa, or mashed potatoes
  • Crumbled feta or goat cheese (optional)

Instructions

  1. Prepare the Chicken:

    • Pat the chicken dry with a paper towel.
    • Season both sides with salt, black pepper, smoked paprika, and garlic powder.
  2. Sear the Chicken:

    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken cutlets and cook for 3-4 minutes per side until golden brown and cooked through.
    • Transfer to a plate and set aside.
  3. Make the Jalapeño Peach Sauce:

    • In the same skillet, melt butter over medium heat.
    • Add the sliced peaches and cook for 2-3 minutes until caramelized.
    • Stir in the chopped jalapeño and cook for another minute.
    • Add honey, apple cider vinegar, Dijon mustard, and red pepper flakes.
    • Pour in the chicken broth and bring to a simmer.
    • Stir in the cornstarch slurry and let the sauce thicken for 2 minutes.
  4. Combine Chicken & Sauce:

    • Return the cooked chicken to the skillet, spooning the sauce over it.
    • Let everything simmer together for 2-3 minutes.
    • Adjust seasoning if needed.
  5. Serve & Garnish:

    • Plate the chicken with your choice of rice, quinoa, or mashed potatoes.
    • Spoon extra sauce over the top and garnish with fresh cilantro or parsley.
    • Sprinkle crumbled feta or goat cheese for added creaminess if desired.

Notes

✔️ Use Fresh Peaches: Ripe peaches add natural sweetness, but canned or frozen peaches can be used if necessary.
✔️ Adjust the Spice Level: Use more or fewer jalapeños and red pepper flakes to control the heat.
✔️ Sear the Chicken Properly: Golden-brown seared chicken enhances the dish’s flavor.
✔️ Don’t Skip the Vinegar: It helps balance the sweetness and adds brightness to the sauce.
✔️ Make it a Meal: Serve with roasted veggies or a fresh salad for a complete dinner.
