For the Dough:
- 3 ½ cups all-purpose flour
- 1 tsp salt
- 1 tsp turmeric powder (for the signature yellow color)
- 1 cup cold butter, cubed
- ¾ cup ice-cold water
- 1 tbsp white vinegar
For the Filling:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp thyme (fresh or dried)
- 1 tsp scotch bonnet pepper, finely chopped (adjust for heat preference)
- 1 tsp allspice
- ½ tsp curry powder
- ½ tsp black pepper
- ½ tsp salt
- 1 tbsp soy sauce
- ½ cup beef broth
- 2 tbsp breadcrumbs
- 1 tbsp vegetable oil (for sautéing)
For the Egg Wash:
- 1 egg yolk
- 2 tbsp milk or water
Instructions
Step 1: Prepare the Dough
- In a large bowl, whisk together flour, salt, and turmeric powder.
- Add the cold butter and use a pastry cutter or hands to mix until the texture resembles coarse crumbs.
- Gradually add ice-cold water and vinegar, mixing until the dough comes together.
- Knead the dough lightly, form into a ball, wrap in plastic, and refrigerate for 30 minutes.
Step 2: Cook the Beef Filling
- Heat vegetable oil in a pan over medium heat.
- Add onions and garlic, sauté until fragrant.
- Stir in ground beef, breaking it apart while cooking.
- Add thyme, scotch bonnet pepper, allspice, curry powder, black pepper, and salt.
- Pour in soy sauce and beef broth, then simmer for 10 minutes.
- Stir in breadcrumbs to absorb excess liquid. Remove from heat and let cool.
Step 3: Assemble the Patties
- Preheat oven to 375°F (190°C).
- Roll out the dough on a floured surface to ¼-inch thickness.
- Cut into 5-inch circles using a round cutter or bowl.
- Place 2 tablespoons of beef filling onto one half of each circle.
- Fold over, sealing the edges with a fork.
- Brush with egg wash for a golden crust.
Step 4: Bake to Perfection
- Arrange patties on a lined baking sheet.
- Bake for 25-30 minutes, until golden brown.
- Remove from oven and allow to cool before serving.
Notes
✅ Use cold butter for a flakier crust.
✅ Let the dough rest to improve texture and elasticity.
✅ Adjust spice level by adding more or less scotch bonnet pepper.
✅ For extra crispiness, bake for an additional 5 minutes.
