Instructions

Step 1: Prepare the Purple Sweet Potato

  • Start by peeling and boiling the purple sweet potato until tender (about 15-20 minutes). Mash or puree it until smooth. Set it aside to cool.

Step 2: Make the Donut Batter

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the purple sweet potato puree, melted butter, milk, eggs, vanilla extract, lavender, and lemon zest. Mix until smooth.
