Donut Batter:
- 1 cup purple sweet potato puree

- 1/2 teaspoon dried culinary lavender, steeped in 1 tablespoon warm water
- 1–2 drops purple food coloring (optional for an extra vibrant glaze)
Instructions
Step 1: Prepare the Purple Sweet Potato
- Start by peeling and boiling the purple sweet potato until tender (about 15-20 minutes). Mash or puree it until smooth. Set it aside to cool.
Step 2: Make the Donut Batter
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the purple sweet potato puree, melted butter, milk, eggs, vanilla extract, lavender, and lemon zest. Mix until smooth.
- Gradually add the wet ingredients to the dry ingredients. Stir until just combined; avoid overmixing.
Step 3: Bake the Donuts
- Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Step 4: Prepare the Glaze
- In a small bowl, whisk together the powdered sugar, lemon juice, and lavender-infused water.
- Adjust the consistency by adding more lemon juice or powdered sugar as needed.
- Optional: Add a drop or two of purple food coloring for a pop of color.
Step 5: Glaze the Donuts
- Dip the cooled donuts into the glaze, allowing any excess to drip off.
- Place the glazed donuts on a wire rack and sprinkle with additional lavender buds or lemon zest for decoration.
