  • 1/4 cup capers, drained and rinsed
  • Zest and juice of 2 large lemons

  • 1/2 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to package instructions until al dente.
    • Reserve 1 cup of pasta water before draining.
  2. Prepare the Sauce:
    • Heat olive oil in a large skillet over medium heat.
    • Add minced garlic and sauté until fragrant, about 1 minute.
    • Stir in capers and cook for another 2 minutes.
  3. Add Lemon and Herbs:
    • Add lemon zest and juice to the skillet.
    • Stir in red pepper flakes and parsley.
    • Season with salt and black pepper.
  4. Combine Pasta and Sauce:
    • Toss the cooked pasta into the skillet with the sauce.
    • Add reserved pasta water, a little at a time, to loosen the sauce and ensure it coats the pasta evenly.
  5. Serve:
    • Transfer to serving plates and garnish with grated Parmesan cheese if desired.
