- 2 cups egg noodles

Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery, sautéing until vegetables are tender, about 5-7 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a boil. Add shredded chicken, thyme, oregano, salt, and pepper. Reduce heat and let simmer for 10 minutes.
- Add egg noodles to the pot and cook according to package instructions until tender, usually about 6-8 minutes.
- Stir in lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
