For the Marinade:
- 1 lb (450g) beef sirloin, cut into thin strips
- 2 tablespoons soy sauce
- 1 tablespoon red wine vinegar
- 1 teaspoon ground black pepper
- 2 cloves garlic, minced
For the Stir Fry:
- 2 tablespoons vegetable oil
- 1 red onion, sliced into thick wedges
- 2 medium tomatoes, cut into wedges
- 1 small aji amarillo (Peruvian yellow chili), sliced (optional)
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon red wine vinegar
- 1/4 cup beef broth (optional, for extra sauce)
- Handful of fresh cilantro, chopped
- Salt and pepper to taste
For the Accompaniments:
- 2 cups French fries (homemade or store-bought)
- 2 cups cooked white rice
Instructions
- Marinate the Beef: In a bowl, combine soy sauce, red wine vinegar, minced garlic, and black pepper. Add the sliced beef and let it marinate for at least 20 minutes (preferably 1 hour).
- Prepare the Fries and Rice: Cook the French fries until golden and crispy. Prepare white rice according to package instructions.
- Sear the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned. Remove and set aside.
- Sauté the Vegetables: In the same pan, add another tablespoon of oil and sauté the red onions, tomatoes, and aji amarillo for about 2 minutes. The onions should remain slightly crunchy.
- Combine Everything: Return the beef to the pan, add oyster sauce, soy sauce, and red wine vinegar. Stir well. If desired, add a splash of beef broth for extra sauce.
- Add the Fries: Toss in the French fries and mix gently to coat them in the delicious sauce. Sprinkle with freshly chopped cilantro.
- Serve and Enjoy: Serve hot with fluffy white rice on the side.
