Description

This Magic Lemon Cobbler is zesty, buttery, and magically separates into layers of cake and curd—easy, bright, and irresistibly good!

Ingredients

Scale

For the Batter:

  • ½ cup (1 stick) unsalted butter, melted

  • 1 cup all-purpose flour

  • 1 ½ teaspoons baking powder

  • ¼ teaspoon salt

  • 1 cup granulated sugar

  • 1 cup milk (whole or 2%)

  • 1 teaspoon vanilla extract (optional)

For the Lemon Layer:

  • 1 cup lemon curd or lemon pie filling

Optional Garnishes:

  • Powdered sugar

  • Lemon zest

  • Whipped cream or vanilla ice cream

Instructions

  • Preheat Oven: Preheat to 350°F (175°C). Place butter in a 9×9-inch baking dish and melt it in the oven.

  • Mix Batter: In a bowl, whisk flour, baking powder, salt, sugar, milk, and vanilla until just combined.

  • Layer Batter Over Butter: Pour batter into the dish with melted butter. Do not stir.

  • Add Lemon Layer: Spoon lemon curd evenly over the batter. Do not stir.

  • Bake: Bake for 45–50 minutes until golden and bubbly.

  • Cool & Serve: Let cool for 10–15 minutes before serving. Add toppings if desired.

Notes

    • Don’t stir after layering—this creates the cobbler’s signature magic.

    • Use fresh lemon curd for the brightest flavor.

    • Double the recipe in a 9×13 dish for more servings.

    • Let it rest before serving—this helps the layers set.

    • Pairs wonderfully with whipped cream or a scoop of vanilla ice cream.
