Ingredients
Biscoff cookies: 1 pack (about 30)
– Cream cheese (softened): 8 oz (225 grams)
– White chocolate chips: 2 cups (360 grams)
– Butter (unsalted): 2 tablespoons
– Powdered sugar: 1/2 cup (60 grams)
– Vanilla extract: 1 teaspoon
– Optional toppings:
– Crushed Biscoff cookies: 1/4 cup
– Chocolate sprinkles: 1/4 cup
– Melted chocolate (for drizzling): 1/2 cup
Instructions
- Crush the Cookies: Use a food processor or a rolling pin to crush Biscoff cookies into fine crumbs.
- Mix Base Ingredients: In a bowl, combine the crushed cookies, softened cream cheese, powdered sugar, and vanilla extract. Blend until smooth.
- Shape Truffles: Roll the mixture into 1-tablespoon-sized balls and place them on a parchment-lined baking sheet.
- Chill: Refrigerate the shaped truffles for 1 hour, or freeze for 15-20 minutes to firm.
- Melt Chocolate: Melt white chocolate chips and butter in a microwave or double boiler until smooth.
- Coat the Truffles: Dip each firm truffle in melted chocolate, ensuring they are fully coated. Let excess chocolate drip, then place on parchment paper.
- Decorate: Add optional toppings – sprinkle with crushed cookies or sprinkles, or drizzle with melted chocolate. Allow the coating to harden.
- Serve and Store: Enjoy immediately or store in an airtight container in the fridge for up to a week.
Notes
– Ensure cream cheese is softened for easy mixing.
– Maintain a warm temperature for the melted chocolate to prevent it from hardening before coating all truffles.
