For the Chicken:
- 2 large boneless, skinless chicken breasts, halved lengthwise
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
For the Sauce:
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped
- 1 teaspoon red pepper flakes (optional)
- 1 ½ cups heavy cream
- ½ cup chicken broth
- ¾ cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon onion powder
- 2 tablespoons butter
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
For the Pasta:
- 12 ounces penne or fettuccine pasta
- ¼ cup fresh basil, chopped (for garnish)
- Extra Parmesan cheese for topping
Instructions
Step 1: Cook the Pasta
- Bring a large pot of salted water to a boil.
- Add pasta and cook until al dente (follow package instructions).
- Drain and set aside. Save ½ cup pasta water for later.
Step 2: Cook the Chicken
- Season the chicken with salt, black pepper, garlic powder, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4-5 minutes per side until golden brown and cooked through.
- Remove from the pan and set aside.
Step 3: Make the Sauce
- In the same skillet, melt butter over medium heat.
- Add garlic and sauté for 30 seconds until fragrant.
- Stir in sun-dried tomatoes and red pepper flakes, cooking for 1 minute.
- Pour in chicken broth and heavy cream, stirring to combine.
- Add Parmesan cheese, Italian seasoning, paprika, onion powder, salt, and pepper.
- Simmer for 3-4 minutes, allowing the sauce to thicken.
Step 4: Combine Everything
- Slice the cooked chicken into strips.
- Add the pasta to the sauce and toss to coat.
- Stir in reserved pasta water if needed to loosen the sauce.
- Return the sliced chicken to the pan, coating it in the sauce.
Step 5: Garnish & Serve
- Sprinkle with fresh basil and extra Parmesan cheese.
