  • Salt and black pepper, to taste

For the Tzatziki Dressing:

  • 1 cup Greek yogurt (plain, full-fat preferred)
  • ½ cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Prepare the Tzatziki Sauce:

    • Grate the cucumber and squeeze out excess moisture using a cheesecloth or paper towel.
    • In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper.
    • Stir well and refrigerate for at least 15 minutes to allow the flavors to meld.
  • Prepare the Chicken Salad:

    • Dice or shred the cooked chicken breast into bite-sized pieces.
    • Add the cucumber, red onion, cherry tomatoes, bell peppers, olives, feta cheese, parsley, and dill.
    • Season with salt and black pepper to taste.
  • Combine and Serve:

    • Pour the tzatziki dressing over the chicken mixture and toss until evenly coated.
