- ¼ cup Kalamata olives, sliced
- ¼ cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- Salt and black pepper, to taste
For the Tzatziki Dressing:
- 1 cup Greek yogurt (plain, full-fat preferred)
- ½ cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp black pepper

Prepare the Tzatziki Sauce:
- Grate the cucumber and squeeze out excess moisture using a cheesecloth or paper towel.
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, olive oil, salt, and black pepper.
- Stir well and refrigerate for at least 15 minutes to allow the flavors to meld.

Prepare the Chicken Salad:
- Dice or shred the cooked chicken breast into bite-sized pieces.
- Add the cucumber, red onion, cherry tomatoes, bell peppers, olives, feta cheese, parsley, and dill.
- Season with salt and black pepper to taste.
