  • Salt & black pepper to taste

For the Mediterranean Bowl:

  • 1 cup cooked quinoa or brown rice
  • ½ cup cherry tomatoes (halved)
  • ½ cup cucumber (diced)
  • ¼ cup red onion (thinly sliced)
  • ¼ cup Kalamata olives (sliced)
  • ¼ cup crumbled feta cheese
  • 1 cup mixed greens (arugula, spinach, or romaine)

For the Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • ½ teaspoon dried oregano
  • Salt & pepper to taste

Instructions

1️⃣ Prepare the Dressing

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
  • Set aside to let the flavors meld.

2️⃣ Cook the Salmon

  • Heat 1 tablespoon olive oil in a skillet over medium heat.
  • Season the salmon fillets with garlic powder, paprika, cumin, oregano, salt, and black pepper.
  • Cook for 4-5 minutes per side until golden brown and flaky.
  • Squeeze fresh lemon juice over the salmon and set aside.
