For the Salmon:
- 2 salmon fillets (6 oz each)

- Salt & black pepper to taste
For the Mediterranean Bowl:
- 1 cup cooked quinoa or brown rice
- ½ cup cherry tomatoes (halved)
- ½ cup cucumber (diced)
- ¼ cup red onion (thinly sliced)
- ¼ cup Kalamata olives (sliced)
- ¼ cup crumbled feta cheese
- 1 cup mixed greens (arugula, spinach, or romaine)
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic (minced)
- ½ teaspoon dried oregano
- Salt & pepper to taste
Instructions
1️⃣ Prepare the Dressing
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
- Set aside to let the flavors meld.
2️⃣ Cook the Salmon
- Heat 1 tablespoon olive oil in a skillet over medium heat.
- Season the salmon fillets with garlic powder, paprika, cumin, oregano, salt, and black pepper.
- Cook for 4-5 minutes per side until golden brown and flaky.
- Squeeze fresh lemon juice over the salmon and set aside.
3️⃣ Assemble the Mediterranean Bowl
- In a large bowl, layer cooked quinoa or brown rice as the base.
- Add cherry tomatoes, cucumbers, red onions, Kalamata olives, mixed greens, and crumbled feta cheese.
- Top with the cooked salmon.
