Instructions
- Prepare the Cookie Dough:
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Mix in the egg, vanilla extract, and almond extract (if using).
- Gradually add the dry ingredients, mixing until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 1 hour.
- Bake the Cookies:
- Preheat the oven to 350°F (175°C).
- Roll the chilled dough into 1 1/2-inch balls and place on a baking sheet lined with parchment paper.
- Flatten each ball slightly and bake for 8-10 minutes, or until the edges are lightly golden.
- Cool completely on a wire rack.
- Prepare the Frosting:
- Beat cream cheese and butter together until smooth.
- Gradually add powdered sugar, mixing until creamy.
- Stir in vanilla extract and lemon juice.
- Decorate the Cookies:
- Spread frosting evenly over the cooled cookies.
- Arrange the fruit toppings in desired patterns.
- For added shine, brush fruit lightly with warmed apricot jam (optional).
