  • 2 cups cooked, shredded chicken
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup cheddar cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced onion
  • 1/2 cup salsa
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine cooked spaghetti, shredded chicken, 1/2 cup Monterey Jack cheese, 1/2 cup cheddar cheese, cream of chicken soup, chicken broth, green bell pepper, onion, salsa, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
  3. Pour the mixture into the prepared baking dish and spread evenly.
  4. Top with the remaining Monterey Jack and cheddar cheese.
  5. Bake for 30-35 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven and let cool for a few minutes before serving. Garnish with fresh cilantro or parsley if desired.
