- 3 cups all-purpose flour
- 1 1/4 teaspoons salt
- 1/2 teaspoon instant yeast
- 1 1/2 cups warm water (about 110°F/43°C)
Instructions
- In a large mixing bowl, combine the flour, salt, and instant yeast. Whisk together until well mixed.
- Add the warm water to the dry ingredients and stir with a wooden spoon or spatula until a shaggy dough forms. The dough will be sticky and wet.
- Cover the bowl with plastic wrap or a clean kitchen towel and let it rest at room temperature for 12 to 18 hours, or until the surface is dotted with bubbles and the dough has doubled in size.
- After the resting period, flour your work surface and gently turn the dough out onto it. With floured hands, fold the dough over itself a few times to shape it into a ball.
- Place the dough seam-side down on a piece of parchment paper. Cover it with a kitchen towel and let it rest for another 1 to 2 hours, or until it has puffed up slightly.
- About 30 minutes before the second rise is complete, preheat your oven to 450°F (232°C) and place a Dutch oven (with the lid) inside to heat up.
- Once the oven is preheated, carefully remove the hot Dutch oven. Lift the parchment paper with the dough and place it into the pot. Cover with the lid.
- Bake for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes, or until the bread is golden brown and crusty.
- Carefully remove the bread from the pot and let it cool on a wire rack before slicing.

- Ensure the water is warm, not hot, to activate the yeast properly.
- For best results, use a kitchen scale to measure the flour.
- Let the bread cool completely before slicing for the best texture.
