Ingredients

  • 3 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water (about 110°F/43°C)

Instructions

  1. In a large mixing bowl, combine the flour, salt, and instant yeast. Whisk together until well mixed.
  2. Add the warm water to the dry ingredients and stir with a wooden spoon or spatula until a shaggy dough forms. The dough will be sticky and wet.
  3. Cover the bowl with plastic wrap or a clean kitchen towel and let it rest at room temperature for 12 to 18 hours, or until the surface is dotted with bubbles and the dough has doubled in size.
  4. After the resting period, flour your work surface and gently turn the dough out onto it. With floured hands, fold the dough over itself a few times to shape it into a ball.
  5. Place the dough seam-side down on a piece of parchment paper. Cover it with a kitchen towel and let it rest for another 1 to 2 hours, or until it has puffed up slightly.
  6. About 30 minutes before the second rise is complete, preheat your oven to 450°F (232°C) and place a Dutch oven (with the lid) inside to heat up.
  7. Once the oven is preheated, carefully remove the hot Dutch oven. Lift the parchment paper with the dough and place it into the pot. Cover with the lid.
  8. Bake for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes, or until the bread is golden brown and crusty.
  9. Carefully remove the bread from the pot and let it cool on a wire rack before slicing.

  • Ensure the water is warm, not hot, to activate the yeast properly.
  • For best results, use a kitchen scale to measure the flour.
