Description

Discover the ultimate Pioneer Woman breakfast cookies recipe! Packed with oats, dried fruits, and more for the perfect start to your day

Ingredients

Scale
  • 1 cup salted butter, melted
  • 3/4 cup dark brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp. kosher salt
  • 1/4 tsp. baking soda
  • 1 tsp. cinnamon
  • 2 1/2 cups oats
  • 1 cup dried cherries, roughly chopped
  • 1 cup puffed rice cereal
  • 1 cup pepitas (pumpkin seeds)
  • 1/2 cup chocolate chips

Instructions

  • Prepare Wet Ingredients:
In a large bowl, combine the melted butter, dark brown sugar, and granulated sugar. Beat with a mixer on medium speed until creamy and lightened in color, about 1-2 minutes. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  • Mix Dry Ingredients:
In a separate medium bowl, whisk together the flour, salt, baking soda, cinnamon, and oats. Gradually add this mixture to the butter mixture, mixing on low speed until just combined.
  • Add Mix-Ins:
Fold in the dried cherries, puffed rice cereal, pepitas, and chocolate chips using a rubber spatula.
  • Shape the Dough:
Scoop the dough into 2-tablespoon-sized balls. If baking immediately, place them on a parchment-lined baking sheet, about 2 inches apart. Flatten each dough ball gently to 1/2-inch thickness.
  • Bake or Freeze:
    • To Bake Immediately: Preheat the oven to 350°F (175°C). Bake for 12-15 minutes, or until the edges are golden brown. Let cool on the sheet for 2 minutes before transferring to a wire rack.
    • To Freeze for Later: Freeze the dough balls on a tray until solid, then transfer to an airtight container. Bake from frozen, adding 2-3 minutes to the bake time

Notes

  • Customizing Mix-Ins: Swap out ingredients like dried cherries or pepitas for your favorites, such as cranberries, almonds, or peanut butter chips.
  • Even Baking: Flattening the dough ensures even baking and prevents overly thick centers.
  • Storage: Store baked cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months.
  • Healthier Option: Replace half the butter with unsweetened applesauce for a lighter version.
  • Chewy Texture: Avoid overbaking to maintain a chewy center
