Instructions
- Prepare Wet Ingredients:
In a large bowl, combine the melted butter, dark brown sugar, and granulated sugar. Beat with a mixer on medium speed until creamy and lightened in color, about 1-2 minutes. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract. - Mix Dry Ingredients:
In a separate medium bowl, whisk together the flour, salt, baking soda, cinnamon, and oats. Gradually add this mixture to the butter mixture, mixing on low speed until just combined. - Add Mix-Ins:
Fold in the dried cherries, puffed rice cereal, pepitas, and chocolate chips using a rubber spatula. - Shape the Dough:
Scoop the dough into 2-tablespoon-sized balls. If baking immediately, place them on a parchment-lined baking sheet, about 2 inches apart. Flatten each dough ball gently to 1/2-inch thickness. - Bake or Freeze:
