Ingredients

  • 2 tablespoons olive oil

  • 1 pound boneless, skinless chicken thighs (cut into bite-sized pieces)

  • 12 oz andouille sausage (sliced)

  • 1 small yellow onion (chopped)

  • 1 green bell pepper (chopped)

  • 1 red bell pepper (chopped)

  • 3 cloves garlic (minced)

  • 1½ cups long-grain white rice

  • 2½ cups chicken broth

  • 1 tablespoon Cajun seasoning

  • Salt and pepper to taste

  • Optional: chopped parsley or green onions for garnish


Instructions

  • Heat olive oil in a large skillet over medium-high heat.

  • Add chicken pieces, season with Cajun seasoning, and cook until browned. Remove and set aside.

  • In the same pan, add sliced sausage and cook until browned. Remove and set aside.

  • Sauté chopped onion and bell peppers in the same skillet until softened (about 4–5 minutes).

  • Add minced garlic and stir for 1 minute until fragrant.

  • Stir in the uncooked rice and toast for 1–2 minutes with the vegetables.

  • Pour in chicken broth, add more Cajun seasoning if needed, and adjust salt and pepper.

  • Return chicken and sausage to the pan. Bring to a simmer.

  • Reduce heat to low, cover, and cook for about 20 minutes or until rice is tender and liquid is absorbed.

  • Let sit for 5 minutes, then fluff the rice and garnish with chopped parsley or green onions.

Notes

  • For less spice, use mild sausage or reduce Cajun seasoning.

  • Long-grain rice works best to avoid mushiness.

  • Don’t stir while the rice is cooking—it needs steam to cook evenly.

  • Want more veggies? Add corn, diced tomatoes, or okra.

  • Leftovers keep well in the fridge for up to 4 days and freeze beautifully.
