Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs (cut into bite-sized pieces)

12 oz andouille sausage (sliced)

1 small yellow onion (chopped)

1 green bell pepper (chopped)

1 red bell pepper (chopped)

3 cloves garlic (minced)

1½ cups long-grain white rice

2½ cups chicken broth
-
1 tablespoon Cajun seasoning

Salt and pepper to taste

Optional: chopped parsley or green onions for garnish
Instructions

Heat olive oil in a large skillet over medium-high heat.

Add chicken pieces, season with Cajun seasoning, and cook until browned. Remove and set aside.

In the same pan, add sliced sausage and cook until browned. Remove and set aside.

Sauté chopped onion and bell peppers in the same skillet until softened (about 4–5 minutes).

Add minced garlic and stir for 1 minute until fragrant.

Stir in the uncooked rice and toast for 1–2 minutes with the vegetables.

Pour in chicken broth, add more Cajun seasoning if needed, and adjust salt and pepper.

Return chicken and sausage to the pan. Bring to a simmer.

Reduce heat to low, cover, and cook for about 20 minutes or until rice is tender and liquid is absorbed.

Let sit for 5 minutes, then fluff the rice and garnish with chopped parsley or green onions.

For less spice, use mild sausage or reduce Cajun seasoning.
