Description

Discover the ultimate one-pan recipe: Sun-Dried Tomato Orzo! Packed with flavor, easy to make, and perfect for busy weeknights

Ingredients

Scale
  • 1 ½ cups orzo pasta
  • 1 cup sun-dried tomatoes (oil-packed, drained, and chopped)
  • 3 garlic cloves (minced)
  • 1 small onion (diced, optional)
  • 3 cups chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil or parsley (chopped, for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  • Prepare Ingredients
Chop the sun-dried tomatoes, mince the garlic, and dice the onion (if using). Set aside all ingredients.
  • Sauté Aromatics
Heat olive oil in a large skillet over medium heat. Add garlic (and onion, if using) and sauté for 1–2 minutes until fragrant and softened.
  • Toast the Orzo
Add the orzo to the skillet, stirring to coat it with the oil and aromatics. Cook for 2–3 minutes until lightly golden.
  • Add Broth and Sun-Dried Tomatoes
Stir in the chicken or vegetable broth and chopped sun-dried tomatoes. Bring to a boil, then reduce heat to low and let it simmer. Stir occasionally to prevent sticking.
  • Simmer Until Tender
Cook the orzo for 10–12 minutes, or until tender and the liquid is mostly absorbed. Adjust seasoning with salt and black pepper.
  • Finish with Parmesan and Herbs
Stir in the grated Parmesan cheese and Italian seasoning. Garnish with fresh basil or parsley.
  • Serve
Plate the sun-dried tomato orzo warm, with lemon wedges for an optional zesty touch.

Notes

  • Use High-Quality Ingredients: Opt for oil-packed sun-dried tomatoes and freshly grated Parmesan for the best flavor.
  • Adjust Texture: If the orzo is too thick, add a splash of broth or cream to loosen it.
  • Add Protein: Toss in cooked chicken, shrimp, or sausage for a heartier meal.
  • Make It Vegetarian: Swap chicken broth for vegetable broth and skip any meat add-ins.
  • Spice It Up: Add red pepper flakes for a subtle kick of heat.
  • Storage Tips: Store leftovers in an airtight container for up to 4 days. Reheat with a bit of broth to maintain creaminess.
