Ingredients

- 2 cups stale bread, torn into small pieces or 2 cups breadcrumbs
- 1/4 cup extra-virgin olive oil
- 2–3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
- Fresh herbs (such as parsley or basil), chopped (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the torn bread pieces or breadcrumbs with olive oil, minced garlic, red pepper flakes, salt, and pepper. Toss until the bread is evenly coated.
- Spread the mixture in an even layer on the prepared baking sheet.
- Bake in the preheated oven for 10-15 minutes, stirring occasionally, until the breadcrumbs are golden brown and crispy.
- If using, remove from the oven and immediately sprinkle with grated Parmesan cheese and fresh herbs. Toss to combine.
- Let the pangrattato cool before using it as a topping for pasta, salads, or soups.

- Store any leftover pangrattato in an airtight container for up to a week.
