Description
Delicious no-bake Peanut Butter Oat Cups made with a layer of oats, creamy peanut butter, and dark chocolate.
Ingredients

- Oat Layer:
- 2 cups quick-cooking oats
- 1 cup honey
- 1 cup all-natural, creamy peanut butter
- 1 cup chopped peanuts
- Optional: 1-2 teaspoons water
- Chocolate Layer:
- 6 oz. dark chocolate, chopped
- 2 teaspoons coconut oil
- Peanut Butter Layer:
- 1 cup all-natural, creamy peanut butter
- 1 teaspoon coconut oil
Instructions
- Line a metal muffin pan with paper liners or use a silicone muffin pan.
- In a bowl, combine oats, honey, peanut butter, and peanuts. Mix until combined. If the mixture is dry, add 1-2 teaspoons of water. Press about 2 tablespoons of the mixture into each muffin cup.
- Microwave peanut butter and coconut oil for 15 seconds. Stir until combined. Add 2 teaspoons on top of the Oat Layer and swirl to even it out.
- In a microwave-safe bowl, combine chopped chocolate and coconut oil. Microwave in 20-second increments, stirring in between, until melted. Distribute 2 teaspoons of melted chocolate over each Peanut Butter Layer, swirling to cover.
- Sprinkle chopped peanuts on top.
- Freeze for 30-60 minutes until set. Remove from the muffin pan and store in a freezer bag in the freezer.
Notes
- For a sweeter flavor, use more honey.
- These cups can be stored in the freezer for a quick snack.
- Adjust the amount of chocolate based on personal preference.
