  • 1 cup brewed espresso, cooled
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. Blend the pistachio nuts in a food processor until finely ground.
  2. In a bowl, mix mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth.
  3. Fold in the ground pistachios into the mascarpone mixture.
  4. Dip each ladyfinger into the cooled espresso for a few seconds.
  5. Layer half of the dipped ladyfingers in a serving dish.
  6. Spread half of the pistachio mascarpone mixture over the ladyfingers.
  7. Repeat the layers with the remaining ladyfingers and mascarpone mixture.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Before serving, dust with cocoa powder.
