- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso, cooled
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- Blend the pistachio nuts in a food processor until finely ground.
- In a bowl, mix mascarpone cheese, heavy cream, sugar, and vanilla extract until smooth.
- Fold in the ground pistachios into the mascarpone mixture.
- Dip each ladyfinger into the cooled espresso for a few seconds.
- Layer half of the dipped ladyfingers in a serving dish.
- Spread half of the pistachio mascarpone mixture over the ladyfingers.
- Repeat the layers with the remaining ladyfingers and mascarpone mixture.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder.

- For a stronger pistachio flavor, add more ground pistachios to the mascarpone mixture.
- Ensure the espresso is cooled to prevent soggy ladyfingers.
