- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup hummus
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the mixed vegetables into bite-sized pieces.
- In a bowl, toss the vegetables with olive oil, garlic powder, paprika, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 20 minutes, or until tender and slightly caramelized.
- While the veggies are roasting, prepare the hummus in a serving bowl.
- Once the veggies are done, remove them from the oven and let them cool slightly.
- Top the hummus with the roasted veggies and garnish with fresh parsley.
