A delicious baked casserole layered with corned beef, sauerkraut, and Swiss cheese, topped with a creamy egg mixture.

- 1 pound corned beef, sliced
- 1 cup sauerkraut, drained
- 2 cups Swiss cheese, shredded
- 1 loaf rye bread, cubed
- 1 cup Russian or Thousand Island dressing
- 4 large eggs
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large baking dish, layer half of the cubed rye bread on the bottom.
- Spread half of the sliced corned beef over the bread.
- Add half of the sauerkraut on top of the corned beef.
- Sprinkle 1 cup of shredded Swiss cheese over the sauerkraut.
- Repeat the layering process with the remaining bread, corned beef, sauerkraut, and cheese.
- In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture evenly over the layered ingredients in the baking dish.
- Drizzle Russian or Thousand Island dressing on top.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Allow to cool for a few minutes before serving.
Notes
- Feel free to substitute the dressing with your favorite type.
- Ensure the sauerkraut is well-drained to prevent excess moisture.
