- 1 ½ cups all-purpose flour
- ½ cup powdered sugar
- ½ cup unsalted butter, softened
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix 1 ½ cups flour, powdered sugar, and softened butter until crumbly. Press into the bottom of a greased 9×13 inch baking dish.
- Bake the crust for 15 minutes, then remove from the oven.
- In another bowl, combine chopped rhubarb, granulated sugar, eggs, vanilla extract, ¼ cup flour, baking powder, and salt. Mix well.
- Pour the rhubarb mixture over the baked crust.
- Bake for an additional 30-35 minutes, or until the filling is set and lightly browned.
- Allow to cool before cutting into bars.
Notes
- For a sweeter taste, you can increase the amount of sugar in the rhubarb mixture.
- These bars can be served warm or chilled.
- Store leftovers in the refrigerator for up to 3 days.
