Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped rhubarb
  • 1/2 cup brown sugar
  • 1/4 cup rolled oats
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the eggs, milk, and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the chopped rhubarb gently.
  7. In a separate bowl, mix together the brown sugar, rolled oats, and chopped nuts to create the streusel topping.
  8. Fill each muffin cup with batter and sprinkle the streusel topping generously over each muffin.
  9. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter muffin, increase the sugar to taste.
