For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
For the Stuffing:
- 1 cup fresh spinach, chopped
- 1/2 cup roasted red peppers, sliced
- 1 cup mozzarella cheese, shredded
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
For Cooking:
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 teaspoon dried basil (optional)
Instructions
Step 1: Prepare the Chicken
- Preheat oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Season both sides of the chicken with garlic powder, paprika, salt, and black pepper.
Step 2: Make the Stuffing
- In a bowl, mix together chopped spinach, roasted red peppers, mozzarella cheese, Italian seasoning, and red pepper flakes.
- Stir well to combine.
Step 3: Stuff the Chicken
- Divide the stuffing evenly among the chicken breasts.
- Use toothpicks to secure the openings and keep the stuffing inside.
Step 4: Sear the Chicken
- Heat olive oil and butter in an oven-safe skillet over medium heat.
- Add minced garlic and sauté for 30 seconds.
- Place stuffed chicken in the skillet and sear for 3-4 minutes per side until golden brown.
Step 5: Bake the Chicken
- Transfer the skillet to the preheated oven.
- Bake for 18-22 minutes, or until the internal temperature reaches 165°F (75°C).
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- Use thick chicken breasts to hold the stuffing better.
- Don’t overstuff—too much filling may cause it to spill out while cooking.
- Secure with toothpicks to keep everything intact.
- Sear before baking to create a crispy outer layer.
- Let the chicken rest before cutting to retain juiciness.
