  • 2 cloves garlic, minced
  • 1/2 teaspoon dried basil (optional)

Instructions

Step 1: Prepare the Chicken

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. Season both sides of the chicken with garlic powder, paprika, salt, and black pepper.

Step 2: Make the Stuffing

  1. In a bowl, mix together chopped spinach, roasted red peppers, mozzarella cheese, Italian seasoning, and red pepper flakes.
  2. Stir well to combine.

Step 3: Stuff the Chicken

  1. Divide the stuffing evenly among the chicken breasts.
  2. Use toothpicks to secure the openings and keep the stuffing inside.

Step 4: Sear the Chicken

  1. Heat olive oil and butter in an oven-safe skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds.
  3. Place stuffed chicken in the skillet and sear for 3-4 minutes per side until golden brown.

Step 5: Bake the Chicken

  1. Transfer the skillet to the preheated oven.
  2. Bake for 18-22 minutes, or until the internal temperature reaches 165°F (75°C).
  3. Remove from the oven and let rest for 5 minutes before serving.
