For the Roasted Sweet Potatoes:

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)

For the Chicken:

  • 1 boneless, skinless chicken breast, sliced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ tbsp lemon juice

For the Kale:

  • 2 cups fresh kale, chopped
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • ¼ tsp salt
  • 1 tbsp lemon juice

For the Rice:

  • 1 cup cooked brown rice (or quinoa)
  • ½ tsp salt
  • ¼ tsp black pepper

For the Dressing (Optional):

  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • ½ tbsp honey
  • ½ tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  • Roast the Sweet Potatoes:

    • Preheat oven to 400°F (200°C).
    • Toss cubed sweet potatoes with olive oil, salt, pepper, paprika, garlic powder, and cayenne.
    • Spread evenly on a baking sheet and roast for 25-30 minutes, flipping halfway.
  • Cook the Chicken:

    • In a bowl, coat chicken slices with olive oil, salt, pepper, smoked paprika, garlic powder, Italian seasoning, and lemon juice.
    • Heat a skillet over medium heat and cook chicken for 4-5 minutes per side, until golden brown and fully cooked.
  • Sauté the Kale:

    • In the same skillet, heat olive oil over medium-low heat.
    • Add garlic and cook for 30 seconds until fragrant.
    • Add kale, salt, and lemon juice, sauté for 2-3 minutes until wilted.
  • Prepare the Rice:

    • If not cooked already, prepare brown rice according to package instructions.
    • Season with salt and pepper.
  • Make the Dressing (Optional):

    • In a small bowl, whisk together Greek yogurt, lemon juice, honey, Dijon mustard, garlic, and olive oil.
    • Adjust salt and pepper to taste.
  • Assemble the Bowls:

    • Divide rice between two bowls.
    • Add roasted sweet potatoes, sautéed kale, and sliced chicken.
    • Drizzle with dressing (if using) and serve warm.
