Ingredients

  • 3 golden beets, trimmed and peeled
  • 6 carrots, halved lengthwise
  • Olive oil, salt (for roasting)
  • Burrata cheese
  • Dressing: 3 tbsp olive oil, 2 tbsp white wine vinegar, 1 tbsp honey, 1 garlic clove (minced), 1 tsp fresh rosemary (chopped), salt

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss beets and carrots with olive oil and salt; roast for 30 minutes.
  • Sauté beet greens until wilted.
  • Whisk dressing ingredients together.
  • Assemble salad: combine roasted veggies, greens, and burrata. Drizzle with dressing
