- 3 red beets, peeled and sliced
- 3 golden beets, trimmed and peeled
- 6 carrots, halved lengthwise
- Olive oil, salt (for roasting)
- Burrata cheese
- Dressing: 3 tbsp olive oil, 2 tbsp white wine vinegar, 1 tbsp honey, 1 garlic clove (minced), 1 tsp fresh rosemary (chopped), salt
Instructions
- Preheat oven to 400°F (200°C).
- Toss beets and carrots with olive oil and salt; roast for 30 minutes.
- Sauté beet greens until wilted.
- Whisk dressing ingredients together.
- Assemble salad: combine roasted veggies, greens, and burrata. Drizzle with dressing

- Roast vegetables evenly in a single layer.
- Substitute burrata with mozzarella or goat cheese if needed.
- Add nuts or pomegranate seeds for extra crunch and flavor.
