Ingredients

Scale

Base Ingredients:

  • 1 lb ground sausage (mild, spicy, or breakfast sausage)
  • 1 can (10 oz) Rotel tomatoes with green chilies, undrained
  • 16 oz Velveeta cheese, cubed
  • 1/2 cup cream cheese (optional, for extra creaminess)
  • 1/2 cup shredded cheddar cheese (optional, for extra cheesiness)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper

Optional Add-ins:

  • 1/2 cup diced jalapeños (for extra spice)
  • 1/2 cup chopped green onions
  • 1/2 cup diced bell peppers
  • 1/4 cup hot sauce (for an extra kick)
  • 1/2 tsp cumin (adds a smoky flavor)

Instructions

Step 1: Cook the Sausage

  1. Heat a large skillet over medium heat.
  2. Add the ground sausage and cook until fully browned, breaking it apart as it cooks.
  3. Drain any excess grease and set aside.

Step 2: Melt the Cheese

  1. In a saucepan or slow cooker, add Velveeta cheese and cream cheese.
  2. Stir over low heat until the cheese is melted and smooth.

Step 3: Combine Ingredients

  1. Stir in the Rotel tomatoes, cooked sausage, garlic powder, onion powder, and black pepper.
  2. Mix well until all ingredients are combined.
  3. If using optional ingredients like jalapeños or bell peppers, stir them in now.

Step 4: Simmer and Serve

  1. Let the dip cook on low heat for an additional 5-10 minutes, stirring occasionally.
  2. Transfer to a serving bowl or keep warm in a slow cooker.
  3. Serve immediately with tortilla chips, crackers, or fresh veggies.

Notes

Use Freshly Cooked Sausage – This enhances the flavor and texture of the dip.
Keep It Warm – Use a slow cooker on warm if serving for a long period.
Adjust the Spice Level – For a milder dip, use mild Rotel and sausage. Add extra jalapeños for more heat.
Thin Out the Dip – If the dip becomes too thick, add a splash of milk or chicken broth.
Make Ahead & Reheat – Store leftovers in the fridge for up to 3 days and reheat on the stovetop or microwave.
