Description

A quick and delicious sausage and fennel pasta recipe that can be made in just 30 minutes.


Ingredients

  • 12 oz (340g) pasta (such as penne or rigatoni)
  • 1 lb (450g) Italian sausage, casings removed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bulb fennel, thinly sliced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet over medium heat, add the Italian sausage. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped onion and sliced fennel. Sauté for about 5 minutes, until softened. Add the minced garlic and cook for an additional minute.
  4. Stir in the diced tomatoes, chicken or vegetable broth, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes to allow the flavors to meld.
  5. Return the cooked sausage to the skillet and mix well. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  6. Add the cooked pasta to the skillet and toss to combine. Cook for an additional 2-3 minutes to heat through.
  7. Remove from heat and stir in the chopped parsley. Serve hot with grated Parmesan cheese on top.

  • Feel free to adjust the level of red pepper flakes to your spice preference.
