Description
A quick and delicious sausage and fennel pasta recipe that can be made in just 30 minutes.

- 12 oz (340g) pasta (such as penne or rigatoni)
- 1 lb (450g) Italian sausage, casings removed
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 bulb fennel, thinly sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken or vegetable broth
- 1 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- Grated Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet over medium heat, add the Italian sausage. Cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and sliced fennel. Sauté for about 5 minutes, until softened. Add the minced garlic and cook for an additional minute.
- Stir in the diced tomatoes, chicken or vegetable broth, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for 5-7 minutes to allow the flavors to meld.
- Return the cooked sausage to the skillet and mix well. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Add the cooked pasta to the skillet and toss to combine. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in the chopped parsley. Serve hot with grated Parmesan cheese on top.
Notes
- Feel free to adjust the level of red pepper flakes to your spice preference.
- This dish can be made with gluten-free pasta for a gluten-free option.
- Leftovers can be stored in the refrigerator for up to 3 days.
