A quick and tasty recipe for a hearty sausage and white bean skillet dish.

- 1 pound Italian sausage (mild or spicy, based on preference)
- 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes (with juices)
- 2 cups spinach (fresh or frozen)
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the Italian sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-10 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced tomatoes (with juices), white beans, oregano, smoked paprika, salt, and pepper. Stir to combine and bring to a simmer.
- Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen), about 2-3 minutes.
- Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley before serving.
Notes
- Feel free to adjust the spice level by choosing mild or spicy sausage.
- This dish can be made with either fresh or frozen spinach.
- Leftovers can be stored in the refrigerator for up to 3 days.
