  • 8 fully cooked breakfast sausage links (pork, turkey, or plant-based)

  • 2 large eggs

  • ¼ cup milk

  • 1 tsp ground cinnamon

  • ½ tsp vanilla extract (optional)

  • 1 tbsp sugar (optional)

  • 2 tbsp butter (for frying)

Optional Toppings:

  • Cinnamon sugar (¼ cup sugar + 1 tsp cinnamon)

  • Maple syrup or honey (for dipping)


Instructions

  • Prep Bread: Trim crusts off bread and flatten each slice with a rolling pin.

  • Roll: Place a sausage link on one end of each slice and roll tightly. Set seam-side down.

  • Egg Mixture: In a shallow bowl, whisk eggs, milk, cinnamon, vanilla, and sugar.

  • Dip: Dip each roll-up in the egg mixture, coating all sides.

  • Cook: Heat butter in a skillet over medium heat. Cook roll-ups seam-side down first, turning until all sides are golden (2–3 minutes per side).
