Ingredients

8 slices sandwich bread (white or whole wheat, crusts removed)

8 fully cooked breakfast sausage links (pork, turkey, or plant-based)

2 large eggs

¼ cup milk

1 tsp ground cinnamon

½ tsp vanilla extract (optional)

1 tbsp sugar (optional)

2 tbsp butter (for frying)
Optional Toppings:

Cinnamon sugar (¼ cup sugar + 1 tsp cinnamon)

Instructions

Prep Bread: Trim crusts off bread and flatten each slice with a rolling pin.

Roll: Place a sausage link on one end of each slice and roll tightly. Set seam-side down.

Egg Mixture: In a shallow bowl, whisk eggs, milk, cinnamon, vanilla, and sugar.

Dip: Dip each roll-up in the egg mixture, coating all sides.

Cook: Heat butter in a skillet over medium heat. Cook roll-ups seam-side down first, turning until all sides are golden (2–3 minutes per side).
