- 4 boneless, skinless chicken breasts
- 2 cups cherry tomatoes, halved
- 8 oz fresh mozzarella cheese, sliced
- Fresh basil leaves
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1/4 cup balsamic vinegar
- 2 tbsp honey
Instructions
- Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
- Season chicken with olive oil, Italian seasoning, salt, and pepper.
- Add tomatoes and garlic around the chicken; drizzle with olive oil.
- Bake for 20–25 minutes (internal temp: 165°F/74°C).
- Top chicken with mozzarella slices; bake for another 5 minutes.
- Simmer balsamic vinegar and honey until thickened; drizzle over chicken.
- Garnish with fresh basil and serve.
