Description

A tender and flavorful slow-braised beef roast infused with cranberry balsamic glaze, perfect for gatherings and comforting meals.


Ingredients

  • 34 lbs beef roast (chuck or brisket)
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh rosemary sprigs for garnish

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the beef roast generously with salt and pepper on all sides.
  3. In a large oven-safe pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the roast on all sides until browned. Remove the roast and set aside.
  4. In the same pot, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 5 minutes.
  5. Pour in the cranberry juice and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
  6. Return the beef roast to the pot and ensure it is covered by the liquid.
  7. Cover the pot with a lid and transfer it to the preheated oven. Bake for 3-4 hours, or until the roast is tender and easily shreds with a fork.
  8. Remove the pot from the oven and let the beef rest for 15 minutes before slicing.
  9. Serve warm, drizzling some of the glaze from the pot over the slices. Garnish with fresh rosemary sprigs.
