A tender and flavorful slow-braised beef roast infused with cranberry balsamic glaze, perfect for gatherings and comforting meals.

- 3–4 lbs beef roast (chuck or brisket)
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1 large onion, chopped
- 4 cloves garlic, minced
- Salt and pepper to taste
- Fresh rosemary sprigs for garnish
Instructions
- Preheat your oven to 300°F (150°C).
- Season the beef roast generously with salt and pepper on all sides.
- In a large oven-safe pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the roast on all sides until browned. Remove the roast and set aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onions are translucent, about 5 minutes.
- Pour in the cranberry juice and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
- Return the beef roast to the pot and ensure it is covered by the liquid.
- Cover the pot with a lid and transfer it to the preheated oven. Bake for 3-4 hours, or until the roast is tender and easily shreds with a fork.
- Remove the pot from the oven and let the beef rest for 15 minutes before slicing.
- Serve warm, drizzling some of the glaze from the pot over the slices. Garnish with fresh rosemary sprigs.
Notes
- This dish is perfect for meal prep; the flavors develop even more when reheated.
- Serve with mashed potatoes or green vegetables for a complete meal.
