Ingredients
Scale
For the Smothered Green Beans and Potatoes:
- 1 lb fresh green beans, trimmed (or use frozen)
- 3 large russet or red potatoes, cubed
- 4 slices thick-cut bacon, chopped (or ½ lb smoked sausage, sliced)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon crushed red pepper flakes (optional for extra heat)
- 2 cups chicken broth (or vegetable broth for a vegetarian version)
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon Worcestershire sauce
- ½ teaspoon dried thyme
- 1 bay leaf
Instructions
Step 1: Cook the Bacon or Sausage
- Heat a large skillet or Dutch oven over medium heat.
- Add chopped bacon or sausage and cook until browned and crispy.
- Remove the bacon/sausage and set aside, leaving the drippings in the pan.
Step 2: Sauté the Aromatics
- In the same pan, add butter and olive oil.
- Sauté onions and garlic until soft and fragrant (about 2-3 minutes).
- Stir in Cajun seasoning, smoked paprika, thyme, black pepper, and salt.
Step 3: Add the Green Beans and Potatoes
- Add the green beans and potatoes to the pan.
- Stir well to coat them with the seasonings and aromatics.
Step 4: Simmer Until Tender
- Pour in the chicken broth and Worcestershire sauce.
- Add the bay leaf and red pepper flakes (if using).
- Bring the mixture to a gentle simmer, cover, and cook for 25-30 minutes, stirring occasionally, until potatoes are fork-tender and green beans are soft but not mushy.
Step 5: Final Touches and Serving
- Stir the cooked bacon or sausage back into the pot.
- Taste and adjust seasoning if necessary.
- Serve warm and enjoy!
Notes
- Use fresh green beans for the best texture and flavor, but frozen works in a pinch.
- Don’t overcook the potatoes—they should be tender but not falling apart.
- If you want a thicker broth, mash a few potatoes at the end of cooking.
- For an extra smoky kick, add a dash of liquid smoke.
- For a vegetarian version, skip the bacon and use vegetable broth.
