Ingredients

Scale

For the Smothered Green Beans and Potatoes:

  • 1 lb fresh green beans, trimmed (or use frozen)
  • 3 large russet or red potatoes, cubed
  • 4 slices thick-cut bacon, chopped (or ½ lb smoked sausage, sliced)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon crushed red pepper flakes (optional for extra heat)
  • 2 cups chicken broth (or vegetable broth for a vegetarian version)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried thyme
  • 1 bay leaf

Instructions

Step 1: Cook the Bacon or Sausage

  1. Heat a large skillet or Dutch oven over medium heat.
  2. Add chopped bacon or sausage and cook until browned and crispy.
  3. Remove the bacon/sausage and set aside, leaving the drippings in the pan.

Step 2: Sauté the Aromatics

  1. In the same pan, add butter and olive oil.
  2. Sauté onions and garlic until soft and fragrant (about 2-3 minutes).
  3. Stir in Cajun seasoning, smoked paprika, thyme, black pepper, and salt.

Step 3: Add the Green Beans and Potatoes

  1. Add the green beans and potatoes to the pan.
  2. Stir well to coat them with the seasonings and aromatics.

Step 4: Simmer Until Tender

  1. Pour in the chicken broth and Worcestershire sauce.
  2. Add the bay leaf and red pepper flakes (if using).
  3. Bring the mixture to a gentle simmer, cover, and cook for 25-30 minutes, stirring occasionally, until potatoes are fork-tender and green beans are soft but not mushy.

Step 5: Final Touches and Serving

  1. Stir the cooked bacon or sausage back into the pot.
  2. Taste and adjust seasoning if necessary.
  3. Serve warm and enjoy!

Notes

  • Use fresh green beans for the best texture and flavor, but frozen works in a pinch.
  • Don’t overcook the potatoes—they should be tender but not falling apart.
  • If you want a thicker broth, mash a few potatoes at the end of cooking.
  • For an extra smoky kick, add a dash of liquid smoke.
  • For a vegetarian version, skip the bacon and use vegetable broth.
