- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cornstarch (for extra softness)
- 1/2 cup mini peanut butter chips or chocolate chips (optional)
Instructions
- Preheat Oven & Prep – Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter & Sugars – In a large bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
- Add Wet Ingredients – Mix in peanut butter, eggs, and vanilla extract until well combined.
- Combine Dry Ingredients – In a separate bowl, whisk together flour, baking soda, salt, and cornstarch.
- Mix Dough – Gradually add the dry mixture to the wet mixture and mix until just combined. Fold in peanut butter chips (optional).
- Chill the Dough – Refrigerate for 30 minutes to prevent spreading.
- Shape Cookies – Roll dough into 1.5-inch balls and place on the prepared baking sheet. Flatten slightly with a fork to create a crisscross pattern.
- Bake – Bake for 10-12 minutes, until the edges are set but the centers remain soft.
- Cool – Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
✔ Use creamy peanut butter for the best texture (avoid natural peanut butter).
✔ Chill the dough before baking to prevent excess spreading.
✔ Don’t overbake! The cookies will continue setting as they cool.
✔ For extra chewiness, use a mix of brown and white sugar.
✔ Store properly – Keep in an airtight container with a slice of bread to maintain softness.
