Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced peaches gently.
- Pour the batter into the prepared baking dish and spread evenly.
- In a separate bowl, mix together the brown sugar, cinnamon, oats, and a bit of melted butter to create the crumb topping.
- Sprinkle the crumb mixture over the batter in the baking dish.
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
- For best results, use ripe but firm peaches.
- This cake can be served warm or at room temperature.
