- 4 cups ripe peaches, peeled and chopped
- 2 cups granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 packet pectin (1.75 oz)
Instructions
- Prepare jars and lids by sterilizing them in boiling water.
- In a large pot, combine the chopped peaches, sugar, and lemon juice. Stir well.
- Add the spices (cinnamon, nutmeg, ginger) and mix thoroughly.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Add the pectin and continue to boil for 1-2 minutes, stirring constantly.
- Remove from heat and skim off any foam that forms on the surface.
- Pour the hot jam into the prepared jars, leaving about 1/4 inch headspace.
- Seal the jars with lids and process in a boiling water bath for 10 minutes.
- Remove jars from the water bath and let them cool completely on a clean towel.

- Store the jam in a cool, dark place for up to a year.
