Ingredients

  • 4 cups ripe peaches, peeled and chopped
  • 2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 packet pectin (1.75 oz)

Instructions

  1. Prepare jars and lids by sterilizing them in boiling water.
  2. In a large pot, combine the chopped peaches, sugar, and lemon juice. Stir well.
  3. Add the spices (cinnamon, nutmeg, ginger) and mix thoroughly.
  4. Bring the mixture to a boil over medium heat, stirring frequently.
  5. Add the pectin and continue to boil for 1-2 minutes, stirring constantly.
  6. Remove from heat and skim off any foam that forms on the surface.
  7. Pour the hot jam into the prepared jars, leaving about 1/4 inch headspace.
  8. Seal the jars with lids and process in a boiling water bath for 10 minutes.
  9. Remove jars from the water bath and let them cool completely on a clean towel.
