- 3 tsp sambal oelek
- 2 tsp sriracha sauce
- 1 tsp laksa paste
- 4 chicken thighs
- 3 cups chicken stock
- 2 tsp fish sauce
- 1/2 cup laksa paste
- 1 tsp turmeric powder
- 1/2–1 tsp kashmiri chili powder
- 1 can (14 oz) coconut milk
- 3 fried tofu puffs (optional)
- 6–8 oz rice noodles
- 2 tbsp vegetable oil
- Garnishes: chili sauce, red chilies, cilantro, bean sprouts
Instructions
- Soak rice noodles in cold water for 30 minutes.
- Combine sambal oelek, sriracha, and laksa paste for chili sauce.
- Simmer chicken in stock with fish sauce; shred and set aside.
- Cook laksa paste with turmeric and chili powder. Add coconut cream, coconut milk, and chicken stock.
- Add tofu (optional) and chicken. Simmer until heated.
- Cook noodles, assemble bowls, and garnish.
