Ingredients

- 1 lb chicken breast, diced
- 2 tablespoons honey
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 1 tablespoon olive oil
- 2 cups cooked rice
- 1 cup mixed vegetables (bell peppers, broccoli, carrots)
- Yum Yum sauce for drizzling
Instructions
- In a bowl, mix honey, ginger, soy sauce, and sriracha to create the marinade.
- Add diced chicken to the marinade and let it sit for at least 30 minutes.
- Heat olive oil in a pan over medium heat and cook the marinated chicken until fully cooked.
- In the same pan, add mixed vegetables and stir-fry until tender.
- Serve the chicken and vegetables over cooked rice.
- Drizzle with Yum Yum sauce before serving.
Notes
- Adjust the level of spiciness by adding more or less sriracha.
- For a vegetarian option, substitute chicken with tofu.
- Yum Yum sauce can be made at home or purchased from the store.
