Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons honey
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • 1 cup mixed vegetables (bell peppers, broccoli, carrots)
  • Yum Yum sauce for drizzling

Instructions

  1. In a bowl, mix honey, ginger, soy sauce, and sriracha to create the marinade.
  2. Add diced chicken to the marinade and let it sit for at least 30 minutes.
  3. Heat olive oil in a pan over medium heat and cook the marinated chicken until fully cooked.
  4. In the same pan, add mixed vegetables and stir-fry until tender.
  5. Serve the chicken and vegetables over cooked rice.
  6. Drizzle with Yum Yum sauce before serving.
